When will my coffee be shipped?

We use USPS Priority or First Class mail. Most orders arrive in 5 days or less from the ship date. Delivery time from the time of purchase may vary due to the fresh roasting of your individual order, as well as packaging and shipping. Orders placed over the weekend or on a holiday will not be roasted and shipped until the following week.

How long will my coffee stay fresh?

Our roastery uses state of the art nitrogen flush packaging. With this method, oxygen, that would normally degrade the coffee, is flushed out and replaced with nitrogen. This allows an unopened bag to retain that freshly roasted flavor for up to six months after roasting.

Once the package has been opened, coffee is freshest within 2-3 weeks of roasting; but for the best flavors, we recommend consuming within the first week. After opening the package, in about 2 weeks you will begin to notice a decline in the nuances and flavors as the gasses are released. Whole bean coffee stays fresh longer than ground.

How should I store my coffee?

We recommend storing coffee in an airtight container in a cool dark place such as a cabinet. Moisture, oxygen and light degrade the freshness of coffee. Contrary to what some believe, coffee should NOT be stored in the refrigerator or freezer. Not only can coffee absorb the flavors and odors from food around it, but the temperature changes from being stored in the freezer or refrigerator can result in condensation that degrades the coffee.

Do you sell ground coffee?

The coffee we sell on our website is all whole bean. We strongly recommend purchasing a grinder and fresh grinding your coffee right before brewing. Your coffee will stay fresh much longer and the flavor nuances will be preserved if you grind at home. With that said, if needed, we can grind your order for you. Simply specify that you need your coffee pre-ground at checkout.

How do you source your coffee?

Our goal is to know where each bean comes from. We have partnered with reputable importers whose values align with ours. We look for quality beans and collaborative partnerships with importers where transparency is key. We are proud that our coffees come from ethical and sustainable family farms that support local economies around the globe.

What is single-origin coffee?

Single-origin is about traceability from farm to cup and the knowledge that it is a specific coffee rather than a blend. It refers to coffee from a specific region, farm, estate, or processing mill. Single origin allows for a deeper understanding of a coffee’s profile and how it is affected by farming and processing practices at the origin.

What is specialty coffee?

Specialty coffee typically refers to premium grade coffee that is grown in ideal conditions. Specialty beans are those that score 80 points or above on a 100-point scale. Specialty coffee is graded on fragrance, flavor, aroma, body, balance, and much more. The unique flavors and tastes of specialty coffees are the result of the growing conditions and soil composition in which they are produced. Specialty coffees have an overall cleaner and smoother taste on the palate than “regular” coffees. Much like a fine wine, a coffee's personality and character are developed through the soils, region, and climate in which it is cultivated.

How much should I order?

How much coffee do you drink? Since coffee is at its freshest for 2-3 weeks after opening, we recommend ordering a one month supply at a time. However, bags left unopened will stay fresh in the original packaging for up to six months, so if you prefer to stock up, feel free.

Is your coffee certified organic or fair-trade?

While we believe the concept behind Organic and Fair Trade certifications is well-intended, we do not require any third party certifications. Why? Because very little of the price markup associated with these certifications goes to the people growing and harvesting the coffee. As we have mentioned, our focus is on sustainable sourcing from family farms. It is often cost prohibitive for a small farmer to obtain these certifications even if they use organic practices. Pesticides are very rarely used in coffee farming anyway. Our goal is to provide great coffee to you, with absolute assurance that our importer has offered the best price to the family farms we import our coffee from.

Do you offer tours of your Roastery?

Yes! We have a bar around the roaster where you can watch the process from start to finish...all while sipping an espresso, pour over, or your coffee drink of choice.

What is your return/cancellation policy?

Coffee:

Coffee is a perishable product so we are unable to accept returns. We can only offer refunds if you are sent the wrong coffee.

Gear:

If you are unsatisfied with your purchase, you may return or exchange your item within 30 days of purchase. To be eligible for a return, your item must be unused and in the same condition that you received it. It must also be in the original packaging. Original shipping will not be refunded and you are responsible for the shipping cost of returning the item.

Cancelling Orders

If you need to cancel your order for any reason, please let us know within 24 hours of your purchase and we will cancel the order and offer a full refund unless your order has already shipped. Orders cannot be canceled after 24 hours due to the fresh roasting process.

I'm unsatisfied with my coffee. Can I return it?

Due to health code, we cannot accept coffee returns. We will refund orders if the wrong coffee has shipped. If you are unsatisfied with the flavor of your selected roast, we hope that you'll try a different roast. Please contact us and let us know what it was that you didn't care for and we can guide you to a roast that suits your tastes. As for those unused beans, we recommend repurposing your beans as filler for decorative vases and jars, ground and used in your compost, or even cover them in chocolate and indulge in a bit of happy repurposing.

Do you sell in larger quantities than 12oz bags?

If you are interested in a larger quantity of coffee at once, please e-mail us about purchasing a 5-pound bag. We only recommend this option if you go through 5 pounds of coffee within two weeks since this is the window when coffee is the freshest.

Please keep in mind that a 12-ounce bag will serve approximately 30 cups of coffee.

WHAT IS YOUR STRONGEST COFFEE WITH THE MOST CAFFEINE?

Despite the myth, lighter roasts do not have more caffeine. Rather, the level of caffeine in a brewed cup of coffee is a direct correlation between the ratio of coffee and water used. The amount of water should remain constant, while you adjust the amount of coffee to taste. For example, if you prefer stronger coffee, keep the amount of water constant and increase the amount of coffee. For weaker coffees keep the amount of water constant and decrease the amount of coffee. With that said, caffeine levels can vary some by region, but they are not drastically different.

WHAT IS YOUR DARKEST AND LIGHTEST ROAST COFFEE?

We profile every coffee we import to determine at which roast level its character comes through the best. Thus, our darkest and lightest roasts will vary dependent upon our current offerings.

What is your roast schedule?

Great question! We roast a minimum of 2-3 days a week, depending on demand. You can count on your coffee being fresh.

HOW DO YOU RECOMMEND I BREW MY COFFEE?

For standard brewing methods, we recommend brewing 2 tablespoons of coffee per cup, so 16 tablespoons per 8 cups of coffee. This can be adjusted to taste, so if it is too weak, use more coffee (not more water).

There are numerous other delightful brewing methods that we are passionate about, and would love to share with you. If you are interested in tasting the different nuances that coffee offers from various preparations including: Cold Brew, Nitro, French Press, Espresso, AeroPress, Chemex, Cone Drip, and more sign up for our newsletter. We would love to share our knowledge with you!

HOW LONG WILL IT TAKE FOR MY SHIPMENT TO ARRIVE?

Naturally delivery time depends on the proximity of the shipping address to our roastery in Washington state; however, we use USPS Priority and First Class mail, so most orders arrive in less than 5 days from the ship date (not order date). Delivery time from time of purchase may take 5-7 days due to the fresh roasting of your individual order, as well as packaging and shipping. Please take into account weekends and holidays.

What type of grinder do you recommend?

For maximum flavor and consistency, we recommend a burr grinder. Burr grinders produce the most consistent particle size, which will provide the best flavor in the cup.

As far as hand-grind vs. electric, a hand burr grinder is a bit pricier and definitely requires more elbow grease. While we prefer to use our hand burr grinder at home, if you are grinding enough coffee to serve more than two people, an electric burr grinder is most efficient.
